I have the 300/1000 diamond plate. Can I use the 300 grit side to flatten a 120 grit flattening stone (Pride Abrasive)? Or will that remove diamond abrasive from the Trend stone?\

You can use the course side of your diamond stone for flatening a wetstone but this will affect the efficiency of the stone eventually.

Do i use both the polishing compound bar and the AlO paste?

The green/blue polishing compound bar should eventually give you a mirror razor-sharpened edge on any chisel when applied via a strop, stationary, or moving.
